Take sustainably caught, locally sourced fish, highly-skilled chefs and put them together in a character-filled river-front takeaway shop, and you get one of the best fish and chip feeds you will find.
It comes as no surprise Noosaville Fish Market keeps locals, as well as interstate and international visitors, coming back time and time again.
Owner Gary Roser has seafood in his blood.
“I’ve been in Noosa chefing since the end of the ’80s,” he said.
“Our family has been in Noosa cooking since the mid ’70s.
“We’ve always specialised in seafood, so when the opportunity came up (six years ago) to take over the Fish Market it seemed like a natural progression.”
Gary and fellow chef Jamie Lethborg put deep thought and care into every meal they produce in the rustic takeaway shop on Hilton Terrace.
They put their decades of experience working in excellent restaurants into creating high-quality fish and chips that has earned them a long-standing reputation for being among the best.
“We can put into fish and chips what chefs put into restaurants,” Gary said.
“In Noosa – and probably in the world – every restaurant has fish and chips on their menu, and they would charge a more substantial amount than we charge just because they’re a restaurant,” Gary said.
“The idea of being able to produce restaurant-quality seafood at a fraction of the price is what keeps us busy.”
Sourcing fresh local fish, sustainably caught prawns and snap-frozen fish, Noosaville Fish Market also sells fresh seafood for those who prefer to cook their own at home, as well as seafood platters filled with prawns, oysters and bugs.
Hand-made from scratch, the calamari rings are one of the Fish Market’s best sellers.
The crumbed, seasoned calamari is “always guaranteed to be tender”.
“With the skills from our chefs there’s nothing we can’t do,” Gary said.
“We smoke our own fish; we always have a fresh variety of fresh-smoked fish, and not just your usual salmon.”
