Noosa chef gives barbecue tips for Father’s Day

The head chef at a top Noosa restaurant is giving the ultimate barbecue tips for fellow dads to enjoy this Father’s Day.

Peppers Noosa Resort & Villas Head Chef Andrew Wilcox is a dad of three kids who love getting their hands sticky in the kitchen.

“Father’s Day for me is about having family around the barbecue and having fun with your loved ones,“ Andrew said.

“The best thing about being a dad for me is coming home from work and having three screaming kids coming running at you for hugs.

“They’ve always loved getting involved in cooking. Making rissoles with them is a fun one. They can get their hands sticky and bind it all together with the different seasonings and flavours.“

Andrew, a third-generation Noosa local, said the best way to get into cooking for fathers who weren’t confident in the kitchen was by grabbing a barbecue.

“My tips would be, make sure your hot plate is at the correct temperature, leave your meat alone and give it room to cook, use a spray bottle to evenly distribute oil over open flames, keep your equipment clean, soak wooden skewers to avoid burning, season one side of the protein at a time before it hits the grill and put it face down to avoid any moisture being drawn out of the ingredient, make sure you rest your food as it comes off the grill, and enjoy yourself.“

If you’re not keen on cooking yourself, let the professionals do it for you this Father’s Day with a long lunch at View by Matt Golinski, showcasing locally harvested foods hand selected and created by Andrew for the ultimate experience.

“We’re doing different meats, fresh prawns, salads, and all the stuff that you would find at your favourite barbecue,“ Andrew said.

With celebrity chef Matt Golinksi announcing his upcoming departure from The View restaurant, Andrew will continue to guide the property’s culinary direction.

“Even with Matt’s departure we’re always going to be keeping our local element and supporting our local producers,“ he said.

“We’re really good mates, so it’s sad. We’ve done nearly five years together and it’s been an absolute blessing to have him.

“It’s not goodbye, we’re just going separate pathways which always happens in hospitality.

“I’m sure we’ll work together in the future. We’ve got a few changes planned but we can’t release anything yet. I’m sure Matt’s got a few things planned as well.“
