THOMAS Corner eatery is plating up a new summer menu with its signature focus on local seasonal produce, great wines and warm friendly service.
The menu is inspired by local and regional seasonal produce and its little surprise with the kitchen under the capable hands of David Rayner, national award winner as one of Australia’s chefs best utilising local and regional produce in the delicious produce awards.
With such credentials, it is no wonder the new menu shines with freshness and flavours. Mooloolaba tuna, Caboolture berries, Cedar Street haloumi, finger limes, wild caught North Queensland prawns, handpicked Gympie beans are just some of the regional produce featured on the summer menu.
“It is difficult to name a favourite dish as there are so many taste sensations waiting to be sampled including steamed clams, verjus, chilli, tarragon, green shallot and lemon oil or Australian asparagus, Cedar Street haloumi, grapes and golden breadcrumbs,” David said.
“Proving to be popular is the fire-roasted Cone Bay barramundi, cucumber, navel orange and toasted sesame, soy and lime dressing. The light summer flavours are combined to make a balanced dish which provides the perfect showcase for the moist, fleshy white fish.”
David said the majority of herbs used are grown in the walled, raised garden beds specifically designed to grow produce for Thomas Corner.
“This way we can control the quality of the herbs and pick them on a daily basis,” he said.
“The freshness and pristine condition of each product brings a vibrancy and unique life to every dish that leaves our kitchen. We create our own micro mix made up of a variety of 12 or more different herbs and leaves that we use as a special garnish on some of our dishes. So often it is the finishing herbs, oils and vinegars that differentiate a dish from good to something exceptional.”
The outside dining area is the perfect spot to watch early evening activities on the Noosa river foreshore.
Between 3pm and 5.30pm daily Thomas Corner offers “Plenty for 20”, which is a selection of specials for just $20. Freshly shucked oysters and French sparkling, two glasses of wine with cheese and lavosh crackers or two bottles of beers and a bowl of chilli salted fries with some house made malt vinegar aioli are some of what’s on offer.
This is complimented by the knowledgeable, friendly wait staff accompanied by soft candle lighting making Thomas Corner a charming place to dine
