Spicy winter warmer

Homemade chai latte.

WINTER is here so here’s an opportunity to warm up with the Dairy Kitchen’s delicious homemade chai latte.
The Indian-inspired recipe is perfect to keep in the cupboard for those cooler nights or why not share the warmth and gift the tea bags to loved ones.

Ingredients
2 teaspoons black tea leaves
2 cardamom pods, bruised
1/4 cinnamon stick or 1 teaspoon ground cinnamon
3 cloves
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
2 cups milk
1 teaspoon honey

Method
Combine all the spices to create a Chai Latte Mix. At this stage mix can be stored for up to a month in a sealed jar.
Heat milk in a small saucepan or microwave until just below boiling point. Turn off heat, add spice mix and allow to infuse for 3-5 minutes. Stir in honey and strain out spices. Pour into tea cups and serve immediately.

Additional Information
For a larger batch to make 8 serves combine:
2 tablespoons black tea leaves
8 cardamom pods, bruised
1 cinnamon stick, roughly crushed
12 cloves
1 teaspoon ground nutmeg
2 teaspoons ground ginger
Make this mix into a homemade gift by wrapping individual serves into bundles of muslin and tying with string – these can be dropped straight into the saucepan.
