From Japan with love

JOIN highly acclaimed international author Nancy Singleton Hachisu and Mami Kitani, the president of Yamaki Jozo, for a seven-course degustation and an intimate 10-ticket only masterclass on the Noosa leg of their Australian tour.
Nancy Singelton Hachisu intended on spending one year abroad in search of good food. During that year she met Tadaaki, an organic farmer, and they fell in love – 27 years and three sons later she’s still there, living in their Japanese farmhouse in rural Saitama, absorbing traditional Japanese farm culture and leading a movement of farm-to-table Japanese cooking.
Her two highly acclaimed books, Japanese Farm Food and Preserving the Japanese Way, document her personal stories and explore the essence of Japanese country cooking.
Mami Kitani is the young president of Yamaki Jozo, an organic miso, soy and pickle company located in Saitama Japan. Since 1902 the company has been producing traditional Japanese food using carefully selected organic ingredients from local farms.
In October, Mami joins with Fino Foods to launch some of her premium products into the Australian market. Japanophiles will have the opportunity to experience Yamaki Jozo’s shoya, umeboshi paste, shiso and dashi powders and mirin.
Together Nancy and Mami are hosting a dinner at Wasabi on Saturday October 15. The seven-course degustation with a cocktail on arrival is $155 per guest and tickets are limited.
Then, the following day, 10 lucky ticket holders will get the pleasure of learning first hand from Nancy when she further demonstrates and explains the techniques associated with Japanese preserving in an intimate masterclass at The Cooking School Noosa.
She will be presenting delicious dishes inspired by her books and creating a three-course meal for the 10 guests. Masterclass tickets are $270 and include a signed copy of her latest book, Preserving the Japanese Way. This one-off masterclass is an Australian first.
