THE Peregian Beach Hotel are bursting into summer flavours by expanding their repertoire of drinks to include a fresh and creative new cocktail menu.
Their very own in-house 2016 Mixing Star Luke has added his competition creation ‘The Garden Party’ to their summer list, which will start your your mouth watering.
With Disarnno and Tanq 10 mixed with the zesty fresh flavours of cucumber and lime, Luke has kept this one clean and simple.The team has created some beautiful combinations such as gin, red berries, lime, soda and basil in their Red Berry Bramble.
Must-trys are also Lemon Cheesecake and Salted Caramel Espresso Martini.
They have been kind enough to share one their favourites – The Southside Gin Fizz for you to try at home.

Southside Gin Fizz
Hendricks gin, Cointreau, Elderflower liqueur, fresh mint,
simple syrup, lime sorbet and egg white
Southside Gin Fizz
45ml Hendricks Gin
15ml Elderflower liqueur
Lime sorbet
Mint leaves
15ml simple syrup

Slap the mint, add all ingredients to Boston shaker, dry shake first to emulsify the egg then add ice and shake again. Pour into a coupe glass and add 30ml lemonade to finish. Garnish with a mint leaf flat and centre.
