Family meals under $10

Coles are creating meals which feed a family of four a hearty plate for less than $10. Noosa Today will feature one of meal ideas each week for the next month to help keep that winter hunger at bay on a budget.

Creamy Penne Carbonara
INGREDIENTS
375g Coles Australian penne
20g Coles Australian butter
200g Don middle bacon rashers, rind removed, thinly sliced
300ml Coles thickened cream
2 extra large Coles Australian free range eggs, lightly whisked
1/3 cup (25g) Coles shredded parmesan
1 tablespoon coarsely chopped chives

METHOD
Step 1 – Cook the penne in a large saucepan of boiling water following packet directions or until al dente. Drain, reserving 1/4 cup (60ml) of the cooking liquid.
Step 2 – Meanwhile, melt the butter in a large frying pan over high heat. Cook the bacon, stirring, for 3-4 mins or until crisp. Add the cream. Bring to the boil. Reduce heat to low and simmer, stirring, for 2-3 mins or until the sauce thickens slightly.
Step 3 – Add the reserved cooking liquid to the frying pan. Remove from heat. Stir in the eggs and parmesan.
Step 4 – Add the penne to the carbonara sauce and toss to combine. Serve sprinkled with chives.
