A salsa to celebrate

THURSDAY 1 October is World Vegetarian Day and to celebrate we have collected some of our favourite vegie-rich recipes that we’re sure you will love.
People choose to become vegetarian for a number of reasons including religious convictions, concerns about animal welfare or concerns about antibiotic use, and while a vegetarian diet isn’t for everyone, experts say vegetarian foods can be a major source of nutrition and vegetarians are likely to have lower rates of heart disease.
According to the Harvard Women’s Health Watch, vegetarian diets are becoming more popular and accessible thanks to year-round availability of fresh produce, more vegetarian dining options and growing culinary influence of cultures with largely plant-based diets.
Impress your friends with this delicious recipe for a fresh salsa, perfect for serving with corn chips, warm bruschetta bread or simply add to your favourite Mexican dish.

Ingredients:
8 truss tomatoes, seeded and diced.
2 large cucumbers, diced.
Half a cup of super sweet corn kernels (fresh is best).
1 small yellow capsicum, diced.
1 small red onion, finely chopped.
1 large avocado, diced.
A quarter of a cup of coriander leaves, chopped.
A quarter of a teaspoon smoked paprika.
Salt and pepper.

Method:
Simply place all ingredients in a large salad bowl and toss until well-combined. Be careful not to mash the avocado. Season with salt and pepper and serve to your sure-to-be-impressed friends.
