Warm up on the inside

COMING in from the cold or recovering from a cold, nothing is said to be as comforting as a hot bowl of soup.
Made with a variety of nourishing vegetables, soup can be one of the most healing and fortifying of meals, especially in winter.
Soup not only warms you from the inside out, it can also have many health benefits. Traditional ingredients in soup like garlic and pepper work as natural decongestants to thin out mucous and make breathing easier.
Winter time is perfect for soups and Nilla from Vanilla Food, located in Belmondos Organic Market in Noosaville, is sharing her dairy free, gluten free and vegan wicked roast pumpkin and rosemary soup.

Ingredients
1 medium size jap pumpkin, diced and roasted until golden.
1 brown onion, diced.
2 garlic cloves, minced.
2 celery sticks, sliced.
1 red chili, chopped.
2 tablespoon sage leaves, chopped.
2 tablespoon rosemary leaves, chopped.
2 carrots, washed and diced.
2 litres of vegetable stock.

Method
* Saute ingredients in large pot until onions are translucent.
* Add pumpkin and cover with stock, simmer for 30 minutes.
* Blend until smooth.
* Add 1 cup coconut cream and season with salt and pepper.
* Serve with a dollop of coconut yoghurt and a sprinkle of pepitas.
